Friday night Rayann and I spent some time in the kitchen cooking up one of those things which takes me back to the island of Roatan every time I have the opportunity to enjoy them….plantain chips. I am reminded of spending hours with Trent peeling plantains (which turn your hands black, by the way) and then watching Lola and Rachel spend hours frying up the small chips for everyone to enjoy. There is something about eating a plantain chip that takes me back to Roatan and helps me remember all the people I have met along the way.
Rayann and I are planning to return this July. We are excited about an opportunity to work with the people of the island. To share the gospel, to bring a little hope and spread a little love, reconnect with friends and most importantly…to see how God will use that time to speak into our lives.
